STARTED IN A KITCHEN
NO BIGGER THAN A BATHROOM.

Two cousins, one fryer, three years of getting it wrong before we got it loud. We open in Roath in 2024, Cathays in 2025. The recipe never moved — neither did the queue.

1. We brine for 24 hours.

Buttermilk, paprika, garlic. Drains overnight. Yes, it's slower. That's the point.

2. We double-fry.

Once at 140°C to cook through. Once at 180°C to make the noise. Korean style, Welsh chicken.

3. We toss when you order.

Seasoning never sits. That's how mild becomes Cardiff Hot in 12 seconds.
